What are some settings you feel are underused in video games that you'd like to see more of?
I say the 1930's, rampant crime, the Depression, WW2 brewing, extreme poverty and extreme opulence, I feel like there's a lot you could do.
Gothic Horror game in Victorian times, Bloodborne really is the only one I can think of that's any good at all
1970's Japan

has there been a game during the speakeasy era? that sounds fun as hell for an open world type game
classical dungeon and dragons style fantasy

Ancient Greece
Post-apocalyptic winter.

Any kind of late 19th / turn of the century globetrotting adventurer type stuff like Indy or the old Allan Quatermain books. The old Tomb Raiders really were the only kind of video games that had that tone. I don't mention Uncharted because those aren't games.
vikings or viking-inspired settings, but without making everyone a retarded primitive murderhobo who has yet to discover the concept of colors

yeah unfortunately Dragon's Dogma is the only game I know that really managed to convey this into third person. For the rest you're gonna have to deal with isometric throwback stuff like usual

Shadow hearts has you traveling across Eurasia during 1913
The Arthurian world. While of course it's influenced video games for a long time it's never gotten it's very own game that was any good except Knights of the Round which is a pretty cool beat em up regardless.

Neo Tokyo
I recently caught a documentary about Pompeii that really made me wish for an RPG in a provincial Roman town or city. There's really very few games about Rome at all.

I just meant the vibe, not the game style. I've never played a D&D game, but I enjoyed the Dragonlance and Drizzt novel series, very imaginative stuff.

yeah I hear ya dude well the classic games like Baldur's Gate and Icewind Dale capture that vibe perfectly but those are about it, Pillars of Eternity in my opinion felt utterly barren and devoid of that feeling and very joyless so I didn't care for the base game but the expansion I feel came close to that tone
just more westerns goddamn it
