What are the best destruction physics in video games?
Are there any GTA style games with completely destructible cities, where I could bomb places and fly planes into buildings?

Mercenaries 2 had pretty good destruction. If you mean like on a small scale, Rainbow Six Siege is also balanced around being to break through walls and shit to customize your defense.

just cause 3-2 its not completely destructible but you can blow up and destroy stuff as you want.
