I wouldnt say its obsession or overrepresented at all. They chose insects to be associated with the chaos flame, naturally areas and bosses related to it would have something to do with insects. And in fact even then not all do

Everything related to Bed of Chaos has large branchlike protrusions, and the only things related to the Chaos that look like or resemble bugs come from things that attach themselves to Hollows in some way. The Witch of Izalith's soul got consumed, Queelag and The Fair Lady got turned into spiders, the Sunlight Maggot was literally just meant to harry Solaire, and the majority of things coming from the Chaos are demons (Asylum/Stray/Firesage, Capra, numerous pot-demons, etc.) which don't look like bugs or maggots at all. There's those monstrosities in Blighttown, but those are more supposed to be bottom feeders that consume filth than actively trying to add bugs into places they don't belong.

Dark Souls 2 was when From tried to make a unique Souls game. Clearly that was't the best decision, so Dark Souls 3 was just a poor attempt at recreating Dark Souls 1, hence why the art design is literally the same.
