There have been tons of great games coming out of Kickstarter. I only backed Pillars of Eternity and I am really glad I did. Also backed Pillars of Eternity 2: Deadfire on Fig.
I threw 450 bucks at the MST3k Kickstarter. I don't regret it

The acceptable minimum is Risk or Rain or Broforce tier graphics. They have no detail, but enough to effectively communicate the characters, hitboxes, and level design.
Pixel art is a stylistic choice more than anything and Shovel Knight executes it at around SNES tier.
There's more than enough graphical fidelity to fully understand every mechanic.
I personally prefer Hollow Knight's and Dragon's Trap's art direction for a 2D game, but there is no graphical problem with Shovel Knight. Pixel art is miles better than 2.5D.
