you just gotta get in there and plan your layout
I find it helps if you build a reasonably sized above ground wooden structure around your starting wagon with room for a carpenter's workshop and beds, so that you have plenty of time to gradually lay out your underground section as you see fit

learn the UI's basics and it's an extremely efficient way of doing all the things that you need to do in Dwarf Fortress.
It's not possible to make the UI simpler when the game is so complex.

It's not garbage using the cursor layout. It's actually more convenient than traditional RTS/sim format in many situations.
