No. 60fps does not break the game. That was only relevant for like 2 days before it was fixed.

There are 3 places in which you should switch to 30FPS (backspace toggle).

>1. The ladder in undead parish going down to rat pit
If you slide down instead of climb down, you glitch through the map
>2. The jump in Undead Burg to get the crossbow
You can't make the jump on 60fps. Can't reach far enough
>3. The jump in Blighttown to get the Iaito near the start
You need to switch to 30FPS or else you can't reach

Basically 60fps makes jump DISTANCE for LONG jumps slightly shorter. Simple jumps for a short distance or on level ground won't be affected, but only REALLY long jumps across BIG gaps will be affected, and those are very few. Basically the 2 I listed. If you ever need to do a jump and you think "I wonder if I can make it or not" switch to 30fps and try it.

If by flip around you mean fast roll, you need to change your armor probably to get under 25% equip load.

Soft cap is 40, so don't raise endurance above 40. Also, if you plan to permanently 2-hand instead of 1-hand (you can and should still keep the grass crest on your back for the stamina regen), you can cap your STR at 27 instead of 40. Two handing 27 STR makes it equally as effective as 40. Only raise 40 STR if you're going to be 1-handing. I'd also recommend looking into the Man-Serpent Greatsword. At max upgrade it has insane STR scaling, and the moveset is good.

If I recall, I got a pretty good balance of poise/def/equip load using the following pieces

Mask of the Child
Paladin armor
Havel's gloves
Xanthous waistcloth
Man-Serpent Greatsword
Grass Crest Shield
darkmoon talisman
Same rings as you

Xanthous set has really, really good defense for the weight, but no poise. It's good to mix high poise armor with a xanthous piece to maintain under 25%. Just do whatever you want with whatever armor set suits you, but stay under 25% equip load once your endurance reaches the cap (40).
