Most shit you've heard about 3 are blown way out of proportion. 3 is the most polished game in the series (possibly not including Bloodborne, haven't played it) with the best bosses and areas.
2 on the other hand is pretty subpar for a Souls title. The PVP was ruined with Soul Memory, the mechanics feel off and the atmosphere just isn't there, thanks to lots of empty, rectangular rooms.
Don't skip either, especially 3.

What also bothers me is that you suddenly play as a "host of ember" (which has never been spoken of b4 in souls games) and there is no more stuff like hollowing on death (loosing max health). I feel like ds3 is like the casual version of ds.

What are you talking about? You lose your ember status which is 30% more health, so you're back to 75% health unembered in comparison, which is the equivalent of fully hollowed in DaS2 with the Ring of Binding, but after a single death.

Dark Souls 3 is basically a lite version of Bloodborne, as it desperately tries to copy Bloodborne's aggressive combat, but fails, because to do that you have to pick any straight sword or curved sword. All other weapons are inferior to be aggressive, and speedy weapons with a buff on have always been the best everything in every single Souls game ever. The difference is that other Souls games didn't actively try to copy Bloodborne, only Dark Souls 3 does this.

Dark Souls 2 has some amazing mechanic changes that may or may not click with you, has the worst physics ever in recent memory, and feels wonky and cheap at times. Like they outsourced development to a Chinese studio that prides itself on making knockoffs.

However, Dark Souls 2 can still be enjoyable at times, and your character can be many things at once (and the game system even encourages this) so you won't be stuck with "longsword dude with a buff to out-damage great hammers by mashing R1 with my face" every time.

Play Bloodborne no matter what. It's the best of the four by far and anyone that can't see it is a salty PC master cunt that can't let go

Demon Souls has the best atmosphere.
Dark Souls 1 has the best replay value.
Dark Souls 2 has the most content.
Bloodborne has the biggest procedurally generated timesink and the most faux lovecraftian meming. Like all these games, it's pretty good, and there's some of the better gameplay in the series, but jesus christ I have no idea how people enjoy the visual design or the procedurally generated dungeons.
Dark Souls 3 has the most polished gameplay and best first playthrough. Absolutely no replay value, and it's a fucking corridor of a game.

Play in release order, at least 2 playthroughs per games, take a few month of break in between each game.

Bloodborne's biggest flaw is that you spend half the game in loading screens and the other half getting caught up on grave stones.
