Although it is technically possible to bat an arrow out of the way with a weapon, it is far easier to use the bigger surface area of a shield to block arrows with less effort spent in being precise. However in "duel" situations where the opponents are few and generally using only melee weapons, a second weapon is just as good as the first at parrying incoming strikes, yet it is also much better than a shield at poking holes in people. Having two weapons also means being able to easily attack from either direction to take advantage of the weak side of an opponent once it is identified.

PS if you absolutely must holster your sword(s) on your back, place them loosely on the opposite shoulder from your drawing hand, exactly the same as putting it on the opposite hip. Otherwise you won't have enough space to draw them without a very fancy custom scabbard. Very few vidya (Warframe comes to mind) do this correctly.

Icepick grip is ideal for a hammer motion stab, but not anything else.

The icepick or reverse grip is weaker in every other way besides that. Your weakest fingers are closest to the balance point, the grip is no longer properly backed by your thumb and palm, and your index/middle fingers won't be doing shit to secure it in your hand. Try doing any slash bullshit and the knife will very quickly get wrenched out of your hand.

For access, however, depending on where you have the knife on your person, it can be much easier to pull out underhanded. You put a sword on the hip opposite your swordarm so you can actually draw it out. But a knife, you can make a quick, subtle movement to pull it out with the hand on the same side to get it ready.

I do HEMA with rapier and longsword (and the occasional reenactment with different types of sword) and the short answer is "no".

The long answer is "no, but it occasionally works as a transition from one stance to another". The idea of going into a fight, head-on and not basically holding your sword out in front of you is stupid. But, sometimes, if you're going into one stance to another, I guess you could spin it backhand for a sneaky swing. There's no manuals that show it, but you can see how it's possible once you free fight.

Hundt, the author, is simply saying to the reader that if he can have a loaded gun available, those are vastly superior to sword and dagger as you have superior range and if need be, can run away easier, also, they take less time to learn properly.
You're not wrong about duelling pistols though, but they came into use only in the late 18th c. and superseded the sword for duels mostly in the 19th c.
