Hmm, which ones do you take offense to? I'm not seeing a lot that can be described as casualization, mostly just updating the various systems with the modern conveniences the series has accumulated. The original game was already pretty simple and easy to break, all it would take is better balancing to produce a much more challenging game in line with the more recent entries.

Actually, I like the sound of that. Yeah, I could forgive the tired premise if it's fun and flashy (let alone challenging), and I've seen how some Paper enemies are used by others as weapons (Ninjis), so at least there's a creativity layer I hadn't anticipated. Dream Team is great, but sometimes it slows down because of tutorials. The game even repeats tutorials a few times, but in the latest version you can say "no" to most of them.

Paper Jam is a great game with great gameplay and almost no hand holding, as every tutorial is readily available for you without forcing you to read them. The plot is nothing to write home about and the locations are shit you'd epect from any Mario game, but it's still a really good game.

Both games have "challenges" that'll reward you the more you complete. Stuff like "dodge 10 attacks in a row" or "perform 5 excellent attacks in a row".

I haven't played Dream Team, but it's pretty tutorial-heavy and takes after BIS in a few ways.
Paper Jam has some general improvements but is bogged down by padding (much more minigames than any other Mario & Luigi) and some consider the focus on the core Mario series cast to be a drawback though others argue the writing for them is strong enough to offset that.
I'd probably say play Dream Team first.

Fire Emblem Awakening/Smash Bros Melee, and Miyamoto.
Intelligent Systems literally had nothing better to do when they did PM, and barely did for TTYD. Then, suddenly, people gave a shit about Fire Emblem, so Intelligence Systems had something better to do.
This left Paper Mario entirely of the hands of Nintendo proper, who legitimately has real, non-meme grade autism, and can't have two franchises doing the same thing. Thus, Mario&Luigi was saved, while Paper Mario was set to be redesigned into something completely different, or else killed off outright, and which outcome didn't really matter anymore.

Thus, we learn that it was all Sakurai's fault all along. If he had stuck to his guns and cut Marth and Roy from Melee's localization as he had intended, we would still have Paper Mario. Fire Emblem would never have started down its dark path. We wouldn't be dealing with Bowser returning to being a boring, flat villain, and the Toad clone apocalypse.
