small, low latency monitors are the best for gaming. If they are curved or not it really makes no difference.

Big monitors are bad because you'll have to move your eyes around more and lose in response time.

Owned a curved monitor for about 3 months now and stopped noticing the curve ages ago.

On a flat screen teh center is the closest and you see the sides at an angle. A curved screen removes that angle so all of the screen is the same distance

The curve doesn't really do much. It's just an excuse to make you pay a lot more for the same level of quality.

Should I make a three monitor setup with curved screens for full peripheral vision?

The problem with curved screen is games are invariably not designed with them in mind, so the UI information that you would need to keep in front of you at all times will take longer to move your eyes to and result in a minor loss of player performance. This in addition to a higher rate of eye fatigue because of the relatively larger spread of eyesight movement means you'll feel like playing the game even less.
