The stages were too linear and it set sonic on the path towards boost faggotry.
In SA, the stages were built in a way that if you understood the physics and used the spindash in sonics stages right, you could cheese through and enjoy it.
They also nerfed knuckles and took out both the minigames and adventure maps.
