I don't really get how people think Souls games have good PVP. Like it's fun to invade people but the skill bar is so low, you barely have to aim a thing and if you want most encounters to be fun you have to gimp your weapon of choice and probably even your playstyle.

I'd say that CS:GO has one of the highest competitive skill ceilings I've seen in a game in a long time, only older super high level arena FPS compares
Those two and starcraft would be my picks if we are basing this on the skill ceiling and general popularity at their peak
