I have a tendency to play until the final boss then stop playing, no matter how much I enjoy the game

I don't think I can enjoy Pokemon anymore.
I lost track of how many times I've fallen asleep while playing Moon. While I eventually did beat it I have yet to do any of the post game stuff and I honestly have no drive to continue. The NPCs have their Pokemon at levels above mine, that's how little interest I have in continuing. I never finished omega ruby either.

Maybe you should try emulating the basic ass fire red/leaf green, or emerald even. I'd recommend HGSS as well but I'm not sure how well they emulate, was kind of bad when I tried some years ago.
