How does it "come out" of the blue portal then? Does it just instantly appear at some point, or does it smoothly come out of the blue portal (at the speed of the orange portal)? And if the latter, what makes it stop? Surely it DOES have momentum when it's coming out of the blue portal. How else does it come out if not by moving?

This is what I mean that you don't understand relativity, and the video that you linked proves it even further. The situation in the video is not comparable, in the video the guy is going through a window, and both ends of the window are moving at the same speed. In the portal picture, only one end of the portal is moving and the other (the one the cube comes out of) is stationary.
See the picture, your video is the situation above, but OP's picture is the situation below.
Do you think that in both scenarios, the same thing happens? Nope.

In the above scenario, the momentum for the cube caused by the orange portal is instantly negated by the blue portal as soon as the cube is coming out. In the below scenario (and OP's pic), this doesn't happen, and there's nothing to stop the cube. So yes, in a sense, it 'gains' momentum while going through the portal in relation to the rest of the world

Portal movement does not transfer to the cube - portals are like magic doorframes - easiest way to think them like that. If I have a hallway with a moving doorframe the frame's momentum is not fucking transferred to me and make me into Kenyan.

The cube slides to ground because slope and the wall behind yellow portal. Even in the game itself I am sure if someone were to make a mod map where moving pillar can be applied with the portal, movement of that pillar is not equation to your speed.
