If you are looking on Steam I would recommend Mushihimesama and Deathsmiles. I'm a big Cave fan but a far number of people in """the community""" don't like them. Those two are the easier games in their catalog.

Sine Mora is an euroshmup and it's gonna have an improved rerelease soon.
Jets 'n Guns is a good euroshmup
Mushihimesama and Crimzon Clover for bullet hell
Ikaruga for an interesting gameplay gimmick
Jamestown was alright, has gameplay split into single level chunks instead of forcing you to play everything back-to-back, though it has that as well. Also a great soundtrack.
Deathsmiles for babby's first Cave, and goth lolis
Other good stuff to look into: Eschatos, Raiden IV, Dodonpachi, Astebreed, Kamui, RefleX, ALLTYNEX Second, eXceed 3rd, generally anything by Cave or G.Rev, Edelweiss makes some entertaining if overly flashy and gimmicky shmups.
