I've just beaten the first boss and the entire time I've played has just been clicking the basic attack option and watching shit die in one click. I thought the boss would be different so I used the skills the game gives you and killed it in three hits so then I redid the fight targetting just the boss and not its ads and only used basic attack and still won.

Yeah, to get sex scenes you actually have to lose in fights against mission end bosses. Thankfully in NG+ you can inherit your stats and equipments, so that turns all the regular mobs irrelevant.
Just save right before the boss encounter, and then suicide bomb. If you get a scene, it's right place to do it. If you don't get one, just load and beat the boss normally.

To get that you have to not be virgin in chapter 1, which then gets you few different quests, and then you lose in the final quest of the chapter.
