You can change your class later when you're a higher level, just like in Wizardry, and having those advanced classes right at the beginning is actually pretty shit since you won't find equipment for them until the later dungeons so you'll have to make due with the random starter stuff for ages. Well, imagine it like this.
You want a user interface to be responsive right? So what you do is have a single thread dedicated to UI, and from there all the buttons you click get put into an input buffer, which then the game thread can pull these inputs from the buffer, thus updating the game with both inputs.

For example, say that I press FORWARD and then MENU on the same loop cycle, and every time that I press forward, the game has to re-render the scenery. Then, when I press forward, the game logic can see that I pressed the forward button, bring up the menu, and still render my movement.

There's many other reasons to do multi threading between ui and game logic but the real reason relies on streamlined input, or expected input occurring. I could bring up more examples such as looking on websites and what not, but I'm entirely too lazy right now to do so.

If you've never played EO before the classes don't tend to fit archetypes exactly. The most fun part of the series is making your created party have as much synergy as possible

For instance I made a party based on what looked cool in EOIV (Which was my first and most highly recommended) and by the end of the game had a system built out to wipe out mooks automatically and have insane single target DPS for bosses.
Whatever you do you can make it work.

Also you make your entire party cute anime girls or girls(boy)

Does this game play anything like daggerfall? I am a fan of older RPGs.

It's not that hard, it's the same as Wizardry's and old AD&D's system.
TLDR: Your race sets a maximum cap for a starting attribute like Strength.
So when you roll a new Character a Human might have a max Strength of 18 and a Giant might have one of 22. (this is AD&D for reference)
But you roll your stats so the Giant might well get a Strength of 8 even though his theoretical best roll nets you 22.

Now classes have stat requirements, certain ones like Templar can only be achieved with Durendils at the start of the game. Other races must change class later on when they meet the requirements.

Advanced classes don't have very good equipment choices early in the game though, so you might want to start with basic ones anyway.
