You could blindly throw a dart and hit a decent-to-good Mario game, but here, I'll help.
>2D Platformers
Super Mario Bros. 1, Super Mario Bros. 3, Super Mario World, and Wario Land: Super Mario Land 3 are all worth your time.
>3D Platformers
Mario 64 simply because it still holds up moderately well and is a piece of the medium's history. Sunshine and Galaxy 1 & 2 are worth a try.
>Puzzle Games
Dr. Mario is a fun Tetris-esque, as well as Wario's Woods.
>Racing Games
Mario Kart 8 and Mario Kart Double Dash are the superior games.
>RPGs
Super Mario RPG: Legend of the Seven Stars is tainted by weeb garbage and not worth playing. Instead you should play Paper Mario and Paper Mario: The Thousand Year Door, as well as Mario & Luigi: Superstar Saga and Mario & Luigi: Partners in Time.
>Party Games
2 & 7 are good times, as well as the Smash Bros. series.
>Sports Games
Tennis 64 and Power Tennis (with super strikes turned off) are the best tennis simulation games in history. Golf, Strikers, and Baseball are all worth a look if you are a casual fan of said sports. Don't even look at anything else.
>Spin-Offs
Luigi's Mansion, the original Yoshi's Island, and the Donkey Kong Country series (pmuch all of them) are definitely worth your time.

Would also suggest following Odyssey's development, it releases this October and looks like the first solid 3D Mario game in 7 years.

2 is the black sheep of the series, despite introducing some series mainstay enemies. I was only thinking about the originals, but I didn't consider the Super Mario All Stars/GBA version of SMB3 might be worthwhile to a newcomer. The arcade mario bros doesn¿'t really play much like most of the rest of games, so I don't consider it essential.
It is good if you want to see the start of mario though, yeah. For history and completionist purposes.

Super Mario Land is critically underrated and is better than Mario 3, I wish it was the nostalgia talking but it's genuinely a better game.
