5 is the best DQ game imo. If you want to play the original 2, Dragon Quest I+II on SNES is the best way to play them (you can beat DQ1 in under 10 hours), though bear in mind that they're kind of archaic. You can start with any DQ really, but the whole ageing and family aspect of 5 is most appealing to me.
As for FF, just play FF1-6

In VII is there a reason to have a character be a certain job when it teaches them skills they already know? For example, I've got Gabo as a fighter and he's learned roundhouse, but he already knows bark which does the same thing. Maribel's a mage, but she's been mostly learning spells she already has.

It wouldn't. Dragon Quest III is basically the pinnacle of the grid movement/Ultima style for Dragon Quest. If they're going to remake Dragon Quest III in 3D, they might as well just make a whole new game with classes. Then add unique new gameplay/design mechanics that couldn't be done in the original Dragon Quest III. Which is what Dragon Quest VI, VII, IX and X did.

It's like how they shouldn't remake Chrono Trigger into 3D. You'd lose the original style the sprites gave you and then it wouldn't feel like Chrono Trigger anymore. But you could make a third Chrono game with Dragon Quest VIII style graphics.

Pretty much just each characters passive skill tree (Courage, Humanity, Sex Appeal or Charisma). Then max out one of the weapons. Yes, there are optimal builds for each character, but they take a complex system of putting certain number of points into certain trees. You don't need to do all that on your first playthrough. Just focus on one weapon and one passive per character.

SquareEnix claimed they will support DQX for 10 years. And since it still has strong subs in Japan, they probably will. Right now it's only at year 5.

But even if they brought it to the west and it only stayed alive for 1 year, it would make more than enough money. The major cost is development costs which have been covered. All they need to cover for a western release is localization and servers. Which are so low that 50k subs would cover it. This is why totally unknown Korean MMOs can still make a profit when localized.
