Social and biological reasons. Women are women. They're supposed to be nurturers and supporters on a pretty core biological and psychological level.

Both tanking and dps require a more stratigic, calculated, and mechanical approach that healing specs can't provide cause mechanics. The male brain is hardwired to handle mechanical situations better through superior eyehand and rapid problemsolving.

Women are better at emotions, communication, and the like, typically. And while having a more social role in real life is great, women tend to suck at vidya on average. You can't give emotional support through your gameplay. Healing in mainstream mmos is far easier than DPS, especially as you climb the levels of play and start playing with good players. So it both appeals to the 'nurterer' and the 'god aweful at mechanics' part of women.
