Even if video game graphics were that good looking it would be hard to take in the beauty of this scene since you would be looking from the perspective of the adventurer on the horse not from the viewer of the canvases.
The devs would need to put you in a situation where you're high up enough to get a beautiful view of the scenery and not many games get DOF right, Witcher has an incredible draw distance but since the DOF is shit everything looks flat

LOD. LOD is always the culprit when it comes to blurry distant textures and jaggy landscape edges.
