Yeah, that's the holy trinity for me. Witcher 3 is pretty good too with the cutting things in half.
A classic is Soldier of Fortune 2. The first game to have character models that break apart in detail.

Yeah Witcher was quite good with gore (Better than most anyways)
STRAFE has some pretty ridiculous gore, but it's more retro-style than modern
Dying Light has some good dismemberment

Critical hits show some cool xrays of breaking bones, you can hack off limbs, plus the death ragdolls are well-designed.

Someone saved my webm, so that's how that feels. That being said, the Nvidia flex looks pretty good, aside from the jelly-like blood, but is so poorly optimized that it's not worth turning on unless you don't mind running the game under 60 fps. I'm hoping that it gets fixed, but that means having faith in twi and even I'm not that stupid.
