The writing is good, I really enjoy the story. But I just find it boring, I can't play it for more than 3 hours because I just get bored of the combat and all the running around and the shitty horse

Witcher 3 is great for immersion and just trekking around in a comfortable setting but the gameplay is trash and main story is passable at best. Lots of cool side quests though.

Breath of the Wild does open world better than Witcher (and combat/enemies slightly better) but it's even worse in story aspect and runs on dated hardware. For games that does both gameplay and story better than Witcher 3 we have stuff like Yakuza 0 this gen.
