I didn't mind it so much because square dancing takes quite a bit of skill and motorcontrol to pull off successfully, and it's balanced out by the fact that square dancing is really easy to defeat by putting you in a hallway, putting something behind you, or even just putting multiple enemies in the room instead of just one.

No, honestly, the only legit flaw I have with Grimrock is mouse control for attacks. I think there should have been a key, like space bar, that cycles through all the attacks available to the party that could reach. That would have fixed everything it needed to, honestly.

there are barely any puzzles and none of them require more brain power to solve than does require starting a washing machine and figuring out how much detergent to add
the layouts of every dungeon in the game are basically a long corridor with a few ramps, platforms, sometimes a twist or two, then a shortcut at the end to fast track you back to the open world so you can get back to fast traveling from marker to marker
meanwhile ultima underworld, a game that came out in 1992, has dungeons (it takes place mostly in dungeons) that are challenging yet structured sensibly and weren't clearly designed with casual enjoyment in mind
