I'm only playing on my modded NES classic, so I dont really care to go through the Gameboy games or spinoffs. Ya know? Mostly main titles or remakes.

Do you have a recommendation on which I should stick to..?

Just play them in release order. Expect 1 and 3 to be great. 3 is going to kick your ass though. 2 is okay but can be pretty tedious. 4 is a ton of fun even if it's not that hard until the last few stages.

The remake kind of sucks. Go with the original, the real one not Dracula X.

The remake includes both version and an updated SoTN version, so definitely go for Dracula X since you're getting three games in one bundle.
