Pac-Man World 1 is really good, it has more focus in platforming than movement.
If you want to 100% it, there's lots of backtracking between the levels, is not awful, but it can get annoying.
World 2 expands more on the platforming with longer levels and more focus on jumping from platform to platform, but it has some issues like camera angles and some bullshit levels.
World 3 has more focus on story-telling and combat, and it sports the best world atmosphere of the trilogy, at the expense of boring combat, easy platforming and boring mazes. Some of the dialogue can be funny at how corny it is- DID SOMEONE SAY CAKE?!
Start with World on ps1, then go to 2 on GC or PC if you can bypass starforce, 3 is optional and PC version is fine unless you have Win10.

From what I heard, Pac Man World's initial concept went under the name Pac Man Ghost Zone and played completely differently. The development team didn't think the game was all that fun though so they took the elements they liked from Ghost Zone and created Pac Man World with them in mind.
