Reminds me of when I used to jump on moving cars in GTA San Andreas just to see where they were going.
I used to do this all the time, even did it in gta iv.
I also did this in saints row 3, and my god is that game a piece of shit car ai wise.
I remember playing and seeing a message pop up saying that *insert random essential npc here* was unconscious and wondering what had happened to them.
The A.I. in that game was pretty amusing.

Had that happen to me, the NPC is marked as essential so won't die. Lots of NPCs have a high chance of being killed on the road if they have a particularly active schedule. I remember doing the DB questline where you have to assassinate what turns out to be members of the Black Hand, and there's this Dark Elf who travels from town to town. When I finally tracked him down I arrived just in time to see him get murdered by a bear.
