you can get a horse that doesn't have a stamina meter but most have stamina for galloping at full speed (you can feed the horse certain carrots to increase their stamina)

also the reason they seem to control badly at first is because your bond is too low, you need to correct them when they stray or disobey and then praise them to raise the bond, once the bond is high they will control easily... you know, like a real fucking horse would?
