"Diversity" is just employing a larger gamut of characterizations, for better or worse. Many people are stuck on a low-level sign language of diversity, though, which is why you end up with only a few so-called "signs of diversity" getting shoehorned into things, and even then they're just the most superficial ones.

My problem is with writers and their use of diversity is most think it's the end point of world building. They just show a bunch of people with different skin tones in places they wouldn't normally be in that time period but then refuse to tell the audience why, not to justify but to expand the world. Are these people merchants, adventurers or sightseers who settled down, are they an exiled community or a foreign delegation. Little shit like this expands the world and makes it seem like it's actually alive and helps with immersion. For Christs sake when When even Skyrim and Dragon Age 2 have the wherewithal to do this writers need to step up their fucking game.
