The ideal is to try to get through the whole Palace in one go, your health and SP is replenished before the boss fight at the end of the dungeon so don't worry about that, then do the boss fight and then you have the time between then and the change of heart to do whatever you want, like Confidants and boosting stats. The experience bonuses will keep your Personas at a decent level and even if you are underleveled it won't matter because you can always just fuse a really good Persona, and if it is really good, then it'll do just fine even if it's underleveled.

Each OST has it's merits, P3 has some really strong battle themes and emotional pieces, P4 is catchy as all hell, and P5 has a great mix of relaxing overworld music and bombastic battle themes. None of them are inherently "better" than another
