Good taste anon, but as well as Ao no Kiseki handles buildup and hype I still wouldn't say it takes Skies' spot as my favorite JRPG of all time- mostly because it doesn't have the sense of adventure and focuses more on mystery and action, which it does very well but it's just a different kind of feeling
That and Trails is all one big consistent story, so it doesn't feel right to judge it until it's finished- it's ambitious and pretty impressive how far it's gone, but it's basically inevitable that Falcom's going to fuck it up near the end with all the pressure they've put on themselves

Grandia is definitely one of the better JRPG series out there
I'd say 1 is probably the closest that any other JRPG comes to matching Skies' feeling of adventure, and maybe even surpasses it
I wouldn't dare try to compare them because it would end up in a battle between Grandia's combat and Skies' airship exploration, so I'm satisfied just acknowledging them both as very good games

I remember the part where you're in some kind of tornado or black hole moving very slowly and getting encounters every five seconds making for really frustrating exploration, it's the one thing that stops me from replaying it. Is the Legends version really much better in regards to this?

They've already fucked themselves hard with Sen 1 and 2. Well, maybe 1 not so much since even with all the terrible writing pitfalls it steered itself into it was still setting up something interesting, it's really 2 that fucked everything up for the arc. I really don't trust anyone who was part of the writing team for the Sen arc to actually tie up a story properly.

Start with Trails in the Sky First Chapter. Then Second Chapter. These two are two parts of a single story. Then play Trails in the Sky the 3rd. This is sort of an epilogue to the Sky arc (Liberl arc) that sets up the next parts. Next comes the Crossbell arc, consisting of Zero and Ao. Zero has a usable but kind of shitty fan translation out for the PSP version. Ao is not available in English in any form right now. After the Crossbell arc comes the Erebonia arc, currently consisting of Cold Steel 1 and 2 and the upcoming 3. Available on Vita and PS3 right now but coming to Steam with extra (English only) VA soon. The Erebonia arc can be played without having played the Crossbell arc as the games take place during the same time in different in-universe countries, but certain major events from Crossbell are spoiled in the Erebonia games.

Play the PC version for all of Trails in the Sky for the best experience. The PSP versions of First Chapter and Second Chapter are okay if you want portability that bad but the PC version is probably better overall. Trails of Cold Steel 1 is coming out on Steam soon but 2 might be a ways off so you could play both of those on Vita or skip them because they're terrible in every way but combat compared to previous games in the series.
