Way too much. I have an Omega. It has UniBios and plays Neo Geo MVS carts, which I suggest you buy over AES carts, as they are more available and cheaper.
The most I've ever spent on a game was Puzzle Money Exchanger and Windjammers, $400 each. The rest we're around $70 to $200.
I have an AES as well, but it's Japanese and unmodded. So it doesn't get much use.

The closest thing i had for an arcade experience was the dreamcast, but i still wanted to try the real stuff on the neo geo.

It's a real dumb investment, and it's not fun looking at the prices.
But if you can put away some money here and there, it's fun getting it all together. I started with a Japanese AES and Puzzle Bobble.
So yeah, if money is an issue, I recommend just emulating. It might not be "arcade accurate", but it's free. Also I'd recommend playing on a joystick.

Either way, i'm not sure i could spend that much money on that console, i mean i could start by getting the cheapest things but still that's a lot of money and it would take me ages to build a collection. Maybe if i buy an arcade stick and use a Dreamcast emulator i'll replicate the same feeling the arcades used to give me when playing.
