Morrowind. There is no NPC in the base game that is invulnerable. If you go far enough off the rails you can't tell who is or isn't essential to the main plot. Even the god king of the game can be killed. I can't speak for the expansions, really don't remember if they do or not.

In skyrim when you do that mission where you sneak into the Elven consulate or whatever; you're suppose to give your items to that dude who sneaks them in for you as you start the quest essentially defenseless.

Zelda: A Link To The Past does this, a creature with a tongue pulls your shield into its mouth. If you kill it, you get the shield back. But I've never tried to actually leave without getting my shield back, so I don't know if it's possible to perma-lose it. I think you can buy another shield though, I don't remember.

They were 'essential' in that they were part of the intended questchain to complete the main quest. The game will even inform you that you have 'broken the chain of prophecy' or somesuch when you kill them.
If you have broken this questchain by killing someone involved with it, though, you can still do what amounts to a single unmarked quest that allows you to complete the game without having to follow the main quest. Doing this can skip massive amounts of content and allow you to finish the game in something like ten minutes. So they are essential to finishing the main quest, just not to finish the game. You are no longer able to advance the plot after killing them, just ignore it entirely and fight the final boss anyway, often devoid of context.

I personally like the semi-social warfare involved, but it's frankly the most outlandish scenario because of it: The plot only works because you're the masked killer, dressed as the masked killer pretending to be in costume at a party after you've killed or disposed of half of the conspiracy. They just barely force the tone on the right side of believable by making half of the party believe you're Pendleton being delightfully ghoulish, and the other half believe you're intentionally trying to get under their skin.

No, that's a totally separate thing from the developer-designed back path through Morrowind's main quest. Even so, you don't need exploits to survive that way either; just a decent health pool (high enough to survive swinging Keening or Sunder once) and some way to restore or fortify your health (scrolls, potions, enchantments, spells, whatever) up between attacks.

Or you can sell those weapons to NPCs, lure them into the heart chamber, and make them beat the game for you (webm related) since they are capable of equipping items you sell them.

However, you don't need to do any of that if you use the official back path. Through this method you need to kill Vivec and take his Wraithguard. You then get a quest to have the last surviving dwemer to jury-rig it for you, allowing it to still protect you from the damage of Keening and Sunder at the cost of a permanent loss of 200 health when you first put it on. So as long as you have at least 200 health (constant effect fortifications are a good way to keep it up if your level or endurance is too low -- just don't unequip them afterwards or you'll die, at least until you level up enough to have a non-negative base health) you're good to go.

In this way, there are three distinct paths through Morrowind's main quest. The main path where you actually complete the main quest as directed, the back path where you bypass the main quest with the help of only one NPC and a lot of health, and the final path where you beat the game on your own terms without the protection of Wraithguard and without following ANY quest. None of these three paths require the use of exploits or involve any bugs. They're just three legitimate ways to win. Exploiting the alchemy fortify intelligence loop to make super potions is a way to make the latter two paths much easier, but it is not necessary by any means.

You most definitely can in Morrowind, but you will miss out on almost all of the main quest content since doing so means going straight to the final boss and killing him. Still, being able to beat it that way was always intended by Bethesda. The lead designer was bragging about that fact in a pre-release interview. The game treats the main quest as completed as long as you destroy the heart, no matter how you go about it.

The only guys you have to kill in the mission are the torturers in the last room, but maybe you can just get the reports from the chest and escape without shedding blood.
There are more interesting interactions in some other quests (not that many, mind you) but almost everyone doesn't notice them because it is 10x easier to hit people with a stick.
