My biggest issue with Bravely Default's jobs is that the vast majority of jobs are useless. They offer your party passive types of moves and general buffs, but those buffs are meaningless when a Monk can just wipe the field on the first turn.
I appreciate the variety of jobs, but then I have to question the lack of variety in enemy types. If more enemies used status effects or offered unique sorts of challenges, maybe these other jobs would be more useful and the game would have been better. But by and large, by the time your Templar, Slave Maker, Spiritmaster, Pirate, or Performer are ready to go, the high-strength classes have already cleared the field.
It's not that the jobs themselves are bad, but the game isn't designed to fully utilize what has been put in place. More enemies with varied movesets that require strategic thinking would have been nice; furthermore, the game's linear structure offers little to no reason to seek out advanced jobs other than to see the story vignette associated with.
Contrasted with the two series that I mentioned: Dragon Quest III, VI, VII, and IX, and Final Fantasy III and V. These games, while all very different, offer an adequate playground within which you can discover the rewards of most of the jobs on offer. There is almost always endgame content and post-game content to test your mettle. Bravely Default offered none of this and I'm not even dipping my toes into the terrible pacing and structure of the game's plot.
I enjoyed Bravely Default for the 100 hours I put into it. But Bravely Default does not deserve the amount of praise it gets, in my opinion. The game's systems are half-baked at best, the story is lame and tedious, and the characters are bland and predictable.
I generally play these games for the JRPG mechanics and grind, not the story. That's probably not why a lot of people play them, but to me the buck stops at the gameplay design. Bravely Default is a patchwork that leaks at nearly every seam.

You've overlooked the fact that Dragon Quest offers a wide variety of enemy types with various immunities and powers. Ruff or a Dracky /can/ indeed wipe out a whole party of enemies on the first turn, unless they're the type that are immune.
All BD needed was better enemy variety and a lot of it would have clicked. But the developers did not do this.

If you played dqvii again right now you would realize that from the moment you get thin air on any of your characters (preferably ruff due to high speed) you will wipe everything out of your way in one move with few exceptions.
You are massively overestimating the enemy variety here. We get a lot of different looks but fundamentally a LOT of those monsters are just dummies for moves like thin air and the flame breath.
Maybe some of these enemies even had interesting skills, but hell, how would I know when I wipe them out in the first turn with Ruff every time?
An argument could be made for "just don't use those moves dude" but it doesn't really change the fact that the flaw is there.

Making it so you didn't have to choose the same thing twice to get the better version of each jobmaster decision wasn't a censorship thing but them deciding they fucked up in doing it that way the first time.
It also means you DON'T have to either A) deliberately loop three times through the game to see all those scenes and B) means if you paid attention and went straight to actually continuing you weren't left with the choice of either getting a better resolution or getting the other job, and not seeing the other choice until you start a new game.

As a narrative, it's definitely weaker than the first. It's also more reliant on throwing in a few silly anime cliches here and there (Magnolia's crush on Yew is a big one). It's not awful, though, and I enjoyed it. It does a better job at pacing itself in the second half than Default does, though. Things keep moving. I didn't hate the characters, but the dynamic with Default's team felt stronger, like a family. This feels more like a road trip, which isn't bad, just different.
The core gameplay is a huge step up. You can now Brave an action multiple times in a row instead of going through the menu multiple times, and the new classes are pretty welcome. You actually get access to one of the most interesting and useful abilities very early on in the prologue. Also, switching jobs around is even more encouraged in Second than in Default, so don't be afraid to hop around a bit. There's one point in the game that practically demands that you do this; you'll know it when you see it.
It's a good game, and I really like it. And don't worry about not playing as Agnes, she acts as your "Airy" in the game, so she's still present in a significant way.

I guess one pitfall of a job system would be that the starting jobs are either too consistently good or are completely overshadowed when a new, shinier, objectively better job shows up. A job should have a niche that, while not useful all the time, is useful enough to warrant using in certain situations. This is assuming that you're going to let players hop from job to job regularly, and if so, encourage that. You've got this robust job pool for the player to take advantage of, so use the NPCs to reinforce the fact that certain jobs are useful for certain situations, and relying on only one is dangerous. Similarly, party configurations using different jobs to synergize with one another should be encouraged.

Plot wise there are two things that I found extremely triggering:Victoria's background is explored very briefly but never fully explored, the plague in Eternia is actually interesting but Edea NEVER says much about it, nor is it truly explored in the main story, only hinted at and even then poorly. Einheria and Kamiizumi hint at the true intentions of Braev Lee, but he never explains anything himself, Edea not knowing who Ringabel was, felt out of place, and every single eternian character being evil and then all of a sudden being actually good felt poorly written.
The story was bad but at least the fights were fun.
