I never touched the Metal Gear series before, where should i start?

Barring Hayter's butthurt phase, I really enjoyed him voicing snake.
Sutherland was hot garbage with 5 lines or so and many stupid grunts.

Chronological is a meme since it only focuses on the surface plot.
Release order is better if you want to witness the evolution of the series and see how each game interacts and responds to the ones before it.
A lot of people say release order, but really it makes some sense to start at V because you're playing an amnesiac. Some shit won't make sense until you play the other games, which is what I experienced, so I went back and played 3 and Peace Walker to understand Big Boss, then I went on to MGS 1 and 2 and that shit blew my fucking mind it was so good
Metal Gear and Metal Gear 2 for the MSX are optional but worth playing. You get a little bit of backstory on Solid Snake and Big Boss in them.

First NES game is a heavily altered port of Metal Gear which should be considered non-canonical (doesn't even feature the Metal Gear boss battle)
Second NES game was developed for the US by a completely different studio and is in no way a part of the Metal Gear Story.

You guys really okay with the gameplay fluctuating as you progress? You'll go from current gen to MSX and PS1-era graphics and gameplay. The story already evolves when you're playing in release order. There's a bunch of foreshadowing and dramatic irony that you won't understand unless you play the games in order. Like, you won't understand things like who Raikov is a reference to or why Naked Snake's character arc is so important to the overarching plot until the end of PW or V if you're playing chronologically.
