Levels are meant to be played as one long gauntlet. Most of them don't have shortcuts. Nothing wrong with the game handing you some good heals. Just don't grind them.

There is one good weapon in all 5 games:
Demon's Souls' Estoc.

Furthermore, Demon's Souls had superb weapon balance, with only daggers and crossbows being substandard. More than you can say for the rest of the games.
