Ryzen doesnt officially support win7 so youll get update nags. You can patch that. The real frustration comes from the new mobos for the am4 socket as they usually only have usb3.0 slots available during installation. Win7 doesnt support usb 3.0 drivers during installation. This means you have to create a custom win7 image with the drivers for usb2.0 patched into it

Intel has better single core performance, so they have better performance with emulators as far as pc games go though I'm getting good framrates on everything i have been running and i have a shitty gpu. The 1600x out performs the i5, thats just from a few cursory benchmark searches. So overall amd is a better bang for your bucm at the moment

price/performance the rx580 wins easily against the 1060, but after that amd has literally nothing and Vega seems to be just a 3d rendering card repurposed to videogames, meanwhile nvidia 1070 and up are priced through the roof because of that fact.

my r9 290 is doing a good work so far, hopefully by the time i need to upgrade both amd and nvidia will have competitive products to chose from.

Most AIOs are not much better than high-end air cooling. If you want actual improvements, build a custom loop.
