The shit the A.I would get up to in games like Oblivion and Stalker is what made them appealing.

Like in Oblivion some NPCs could commit crime, so theyd try and pick pocket other NPCs for food if they didnt have any in their inventory. They's normally fail miserably, get chased around by the entire town guard while all the other NPCs in the area lost their shit

stalker, and more so in the sequels +mods probably had some of the most dynamic A.I in gaming. It was buggy, but had streaks of brilliance at the same time. NPCs could do their own thing entirely independent of the players actions, without you triggering things to happen.

You could meet an NPC early on, and then find him dead later on in the game with different gear because he ventured deeper into the zone, looted etc. He wasn't scripted to be dead there just because the player entered the area, it was driven by the A.I.

99% of the time it's because some NPC tried to steal/pick pocket food, fails, the guards go on a man hunt and then other NPCs react depending on their disposition to the NPCs involved in the theft and it all descends into a massacre over stolen bread.
