Part of the appeal of the Resident Evil series has always been it's wide variety of crazy monsters/experiements. Zombies, mutated animals, abominations of science grown in a lab, man eating plants, crazy parasites, etc. When entering a new area, you never new what kind of crazy monster you'd run into next.

Having every almost enemy in the game be a variation on on generic black blob men is straight boring. Especially given the all of the potential there was to work with mutated wildlife in the game's southern bayou setting. Some of the bosses are cool, but the majority of the game's average enemy encounters are weak and extremely predictable after a few hours in.
