Probably 2.
It's just not well designed at all. Beyond the awful day/night cycle and slow ass messages, the general exploration aspect is cryptic in a bad way, partially due to the poor translation. The plethora of fake floors is also terrible and just really shouldn't exist, especially in their form where you either have to memorize where they are or spam holy water. There's no visual indication before or after you fall into them.
And then of course the boss difficulty is just nonexistent. Castlevania 1 is pretty challenging if only really because of how stiff the controls can be, requiring you to git used to it. CVII it ends up harder fighting the regular mobs than any of the bosses.

Ultimately it's just not a well designed game, or fun to play. The 3D Castlevanias are quite mediocre to terrible in the case of the second one, but I'd still rather play them than CVII.

So which one do you think is the best? I think SotN is overrated and I like Aria of Sorrow better.

I played through aria again for the first time in ages yesterday, and is it just me or are the bosses really easy and mostly bad?

Well, no, the problem comes from Diamond Plate. It just makes you borderline invincible until you get to the Belmont fight, but if you're going for the true ending he's not much of a fight given how quickly the orb dies.
He's actually a decent challenge, even with Holy Armor, but of course actually defeating him gets you the bad end.

It's oddly on par. There is no level design it's just repeated hallways and barely any enemy variety all dressed up in awesome pixelart.
Bosses are all the same too, they just throw projectiles.

The only bosses that stood out as difficult were death, prison man and Julius Though julius made up for the rest. I'm now on CotM and am actually enjoying it a lot more than last time

Yeah well, there's not actually very many bosses in Aria. A lot of the bosses are just beat sticks that end up being regular enemies later. The later bosses can be cool, like Balore, the "prison man" and I thought Headhunter was decently challenging. But then I always fight him early.
There's only 11 bosses in AoS, and only 8 of them are unique. The Manticore is unique but not exactly hard. Legion is cool, but not hard. Graham is cool, but not hard. Chaos is cool, but again, not hard.

Played both Master of Spirits, reminded me a lot of AoS the first time then I realized it was made by Konami, fun games in general with great boss fights. I wouldn't call it a metroidvania though since it's more stage based with different exists, that would be like calling Super Mario World a metroidvania.
