I never played any previous mgs games. I know the story is not very good ( based on reviews I read ) but is the gameplay/side things/HQ fun?

If you like grindy open world games sure
If you don't and had played previous entries it could be pretty insufferable

The gameplay itself is loads of fun.
The story is kinda grindy. It's like "go here, do this, get out, go there, do this" etc.
But, the actual stealth and game mechanics are quite fun, yes.
The story isn't that bad though. Don't expect a 10/10 but it's most definitely okay. Nothing like the other metal gear games but vs some other story games that have come out recently it's really not bad.

Not necessarily but it'll give you some additional context which could be key if you haven't played any of the other games; unless getting lost in the story isn't an issue for you. Questioning where you are or why you're doing something is actually in keeping with the game's theme.
There's two mods that I think would be critical for a new player even like you-- The new side-ops addon pack, which adds a ton of optional new missions that offer a bit more variety than what you'd find in vanilla, and a mod called "Infinite Heaven" that allows you to pretty much vastly overhaul the gameplay and adds a little more detail to the world depending on how you set it up. Setting it up can be a hassle and take a while though; both require the Snakebite mod launcher.
Like I wouldn't play TPP without IH now, personally, but this is your first run so take it or leave it for later. It IS worth the trouble though let me tell you.
