Having hitboxes perfectly adhere to characters that were designed first results in bad balancing and shitty attacks.
However, having a character's hitboxes barely adhere to their design is also a shitty system because attacks become hard to follow for anyone not intimate with the hitbox of certain attacks.

Developers don't do what Skullgirls does not because it's expensive, they don't do it because it's stupid and there's no point and often trying to match the animations exactly to the pixel will make your game feel shitty and inconsistent, which is a big no no in fighting games. Weird drops due to inconsistent hit frames happen kinda frequently in MKX and IJ2, it was worse in older games like MK9 but they've improved the system a bit. It's not just the idle animation that can fuck you over, it's every animation, like the animation of being juggled in the air or the reaction the enemy makes to being hit. 2D hitboxes have stuck around for a reason, developers have absolutely experimented with more realistic and model tied hitboxes and basically every time it's a way worse game than 2D hitboxes. Even Tekken, which does model based hitboxes, fudges the fuck out of the size of things so that things work how they're supposed to, but even then you still get goofy shit like side wall combo stuff.

Planetside 2 loves to do this with certain objects, too, especially the wide grey-yellow/teal slanted top consoles in the tech plant capture area.

these things are setup so that if you're sitting in "front" of the console any enemy that's close enough or tall enough can simply see your head (when you can't see them) and then headshot you.
even if you're behind the console (the back edge is taller than the front edge) you can still be headshot, unless you've hidden behind the part of the console with the additional raised bit.

and of course, the fucking head hitbox sizes on the MAX suits are all unique cases due to physical design choices.
TR and NC MAX suits you can actually headshot from behind, meanwhile the VS head hitbox is basically where the front torso is.

normal infantry also has flinch animations which will move the head and thus move the head hitbox, making things that would've got two headshots actually just hit first and miss second.

PS2's issue with weapons is them deciding upon the "realistic" concept of shot offset. Remember how MAX units used to fire their projectiles from their arms? Enough bitching about the weapons just hitting the wall or being able to sort of shoot around the corner had them remove the offset so that it fired straight from the camera, directly at your crosshair.

Meanwhile, infantry still have that offset on their weapons, where the shot is emitted a ways below the center of the screen to emulate it actually coming out of the barrel. So even if you have a clear shot on a guy with him dead in your sights, all of those stupid waist high walls are just high enough that all you're going to do is hit the fence instead of the enemy, as there's no means to ensure your barrel is clearing the cover. Basically using battlements is a detriment to defenders trying to aim down at attackers.

That and the hideous fucking inaccuracy that every weapon suffers as soon as you move or fire more than three shots in a burst. Everything beyond point blank is mostly an RNG match between automatics.

I tried playing dead or alive 5, but the entry barrier is too high, the actual gameplay is spend 10 seconds watching enemy juggling you to death and then wait another minute for next match. My experience isn't crazy since I'm a filthy 09er and I mostly do offline (and I'm shit) but every fightan event I've attended has been great. Stuff for SFIV, BB, GG and throwback 3S. There are salty or obnoxious players but nobody really encourages that and usually I saw people avoiding those types. It absolutely has something to do with latency because what you're complaining about is client side prediction, which is a form of netcode for FPS games designed to remove input delay while playing online with the trade-off being, you guessed it, hitboxes and models being displaced from each other. In a zero latency connection, the hitboxes will always be where the model is, but the more latency you add the more the model drifts. The only other solution would be to implement very classic style netcode where your aiming would literally have delay which adds a different level of inaccuracy.

Here's an example of how networking works in source games. The reason they don't use a client-report system (like Quake does) is because it involves a huge risk of someone injecting hit confirmations where there are none. You also experience things like being hit behind walls much more often because for the other client your hitbox is lagging way behind where it is for you. Overwatch has this same problem to an extent because it generally favors the shooter over the other, but you still get the worst of both worlds in an environment with latency.

To be fair, that ACTUALLY is a literal shockwave that leaves a circular AoE on the ground afterward. It's not like DaS2 webm's where it's clear the enemy was doing a straight attack and hits you from the other side of the world.
That spear jump move doesn't have any i-frames that I'm aware of, at best it has a couple at the very start but not near the end (when he gets hit). If he was on an horizontal plane he would obviously get hit, the only slight mistake is not displaying a visible vertical hitbox on that attack (like dust flying up with the stomp) but vertical attacks are so rare, with spear being the only weapon that uses one more often, that I don't blame the devs for not adding it. As a spear player you simply have to assume you'd get hit by AoE attacks just as you would if you were on ground-level with that specific jump.

Grappling enemies in Souls games are all fucked. Dark Souls 2 had the worst though.

The Mimic at Earthen Peak inside the room with the poison pots and puffers is the buggiest one I've seen. I once threw a firebomb at it, breaking the poison pot and causing it to teleport me into it's grab from outside of the room.

Fighting games are not the worst genre. The problem with fighting games is that they are the one of- if not the most skill intensive genre. While button mashing may let you beat someone who is "good" at the game, chances are if you are the inferior player you WILL lose the vast majority of the time.

There's something of a learning curve- a barrier that restricts the player from having fun until they have learned how to operate the game, learn characters BnB's...etc. People will use words like "spam" despite the fact that if they knew the mechanics they would stop it since most fighting games are aware of these kinds of things and allow for types of reversals or that thingy in Skullgirls that stops infinites.

People hate Fighting Games because they haven't taken the time to learn them. Fighting Games are great, but they take time. People have very short attention spans and it takes a lot to say and be someone truly dedicated.

People would say that this curve is a criticism of the genre, but I like to see these displays of genuine skill.
