According to your own opinion, what is the most challenging, yet very balanced (J)RPG. A game that makes one think but doesn't rely on cheap tactics like RNG.
Dragon Quest VI or VII probably. Though they aren't my favorite JRPGs, they are balanced. Don't have any RPG and require the player to actually pay attention to learning the right skills and utilizing them in battle. You could also probably put Chrono Cross in there too.
All the other JRPGs I would say are better than those like Dragon Quest VIII, Chrono Trigger or Suikoden II are actually quite easy.

If you're playing the 3DS remake, just go whatever classes you want. You'll have 4-5 classes done before the end of the game. Have one character focused on attack magic, one on healing, one on physical and one on special skills (stuff like thief or beastmaster).
If you play the PS1 version, then you have to be very careful what classes you go. Mostly just skip the classes that don't lead to teenidol or hero (which are Pirate and Tamer).
