I see no reason not to play them in release order.

If anything, my only recomendation is to use the Sonic 3 Complete romhack in place of S3 and/or S&K. It adds a lot of subtle but neat changes and fixes to make Sanic 3 & Knuckles play as smooth as possible.

It doesn't remove anything. And if you dislike the changes you can just change it back.
It's superior better solely because you can face both final bosses in one single play-through. In S3&K Sonic 3 original final boss was removed for no good reason.

Are you not confusing it with something else? Because it literally does the opposite. It removes nothing, allows you to play vanilla 3, vanilla knuckles or anything in between them in any combination you like, as well as numeros QoL improvements which, again, can be toggled off if you're a purist.
