It's storytelling in a way unlike pretty much anything else.
Of course if you look at 90% of WWE's output for the last 3 decades then it looks like garbage TV and a waste of time, but when wrestling is good (even in the mostly soulless big company that a vast majority think is the only game in the industry) it's great. It can range from stupid campy fun to compelling shows of sportsmanship and everything in-between.
Also it's got a lot of violence.
They just are.
They're tough, they do acrobatic or flashy moves, and usually have cool designs. Female wrasslers add in a sexy component.
Better question is, why the hell does japan love putting boxers in games? They're boring to look at, have no flash, and are always the same character.

Pro wrestling is the lowest of low brow entertainment that is unequivocally enjoyed by low IQ trailer trash. Vidya as an entertainment medium covers a much broader spectrum, but yeah, there are low IQ manchildren that enjoy childish games ("competitive" smash, anything Nintendo post GCN, etc.). As a hobby, vidya is nowhere near the depths of the totem that pro wrestling resides in.

Because they fight while showcasing impressive feats. Wrestlers attacks go beyond basic striking, they beat their opponents using flips, complex (and impractical) holds and moves that showcase physical strength.
It's the same reason why oriental martial arts were so popular back in the 80s and 90s (and to some extent even today), most people like flashy stuff. It looks cool when a guy punches another one ice cold without breaking a sweat, but when some nigga does the same with a double flying spin kick? Then it looks sick.
Granted, fighting games make boxing, muay thai and other more straight forward fighting styles look just as cool.
