In real world settings, it's because of voice quality mostly. Headphones make it easier to hear the other person and the mic quality on the base phone usually isn't great.
On /v/, everyone just wants to make Nintendoomed shitposts and pretend that you need a horrifying amalgamation of cables to play Splatoon while ignoring the real problem that the voice chat app is fucking garbage and has over a full second of delay

If your headphones have a mic, you can do that on and Xbox One, yes.
The PS4 and Xbone controllers both have a 3.5mm jack on them.
On the Switch, you could also do so, but you'd need to plug them into your phone, and you wouldn't get game audio with them.

When I play on switch and talk with friends I just use one of my phone headphone in one ear to pc and my normal headphones to the switch.

I am doing the same with PS4

What further evidence do we need that Nintendo just isn't even trying anymore. They might as well be selling official Nintendo branded wind -up gramophones so that people can use voice chat.

Or require all players to sit next to a telegraph receiver, so that they can send encoded morse-code messages to other players.

all you need is the switch, a tv, and a phone with the app and speaker phone. The actual app is pretty neat, but voicechat is pretty much unusable unless you have a full team. I tried it with my friend in turf war, but it only let us play with people in the lounge so it was just 1v1. It works, but it is far easier to just call.
