Youtube works better these days.

But twitch is the most popular one, so people who want to watch streams usually go to twitch for that.

Twitch shows the most popular ones at home. Then if you decide to browse the categories, you'll eventually show up on the list.
On youtube it's quite similar, but you'll also be shown to people who have watched other videos about that same game, or something that matches the tags, like "strategy" or "platformer", things like that.
But on youtube it's more of a lucky thing, as people browsing it are not necessarily the type who likes streams. While on twitch everyone browsing is the stream type.
If you have an audience on youtube, stick to it. If not, maybe twitch.
