for me it's gotta be the Mario 64
Peach's Castle wastes very little space and is a good, concise hubworld. But Gruntilda's Lair had atmosphere, on top of all its secrets and objectives; as it should, it always felt like you were in enemy territory, with Grunty's cackling echoing through the halls no matter where you were.
Station Square isn't much of a hubworld. For a bustling city, there's not very much to see and do immediately. It requires cutscenes to point you in the direction of your next objective. It also doesn't help that it's only one of several hubworlds in the game, so listing it as the only hubworld of Sonic Adventure is misleading.
I've not played Sunshine, so I can't comment on Isle Delfino.

Grunty's lair felt like a massive level itself. Delfino Plaza had a lot of areas that weren't accessible until you completed objectives in levels or unlocked new Fludd equipment. A much more compact version of the approach to BK.

Peach's Castle, unlike Gruntilda's Lair, is meant to be friendly territory. It's the princess's domain, so of course it matches her sensibilities and is warm and comforting (despite Bowser lurking in the walls). Of course it has its own secrets as well, with Power Stars that not even Bowser knew about. It was compelling in its own way.

Shame I never got into Gex. I probably would have liked it.
Big fan of Sunshine because of autism and possibilities of dicking around and movement. I think I probably spent about 100 hours just running around Isle Delfino.
I wish I was still just as autistic.
