What are some games like Dark Souls?
Not combat wise, but exploration wise?
Minimal story, open but crafted world with non linear level design, mystery, all that jazz.
Hollow Knight is pretty good if you like metroidvania

Honestly though Soulslike is stupid terminology. Action games have been doing what Souls has been doing since 3D games became status quo

True, but when you say souls-like people get what you mean. A game like Dark Souls.
If I said an action game you could have anything from DmC to Metroid to who even knows.
It's a fucking annoying term but right now it's the only term we have to get across the message desired.

Its an out there response but I'll say it anyway.
Pikmin and probably Pikmin 2 as well.
Similar to souls games they throw really dangerous monsters that will fuck you up 5 feet outside of your safe camps that you can just see in he corner in your eye in the distance. There's this one area in Pikmin 2 where after a certain day, a boss will just drop from the sky at your feet as soon as you walk out of your base. The games has a living ecosystem, for example the small tadpoles in the shallow water mature into hostile frogs after a number of days. The flora changes, monsters will give birth to children overtime that will attack you in groups.
And probably the most important part, the games are extremely atmospheric, however I feel they kinda dropped the ball with atmosphere in the 3rd game.
The games progress quite differently from dark souls but I feel they share similar world building techniques.
My all time favourite games are Bloodborne and Pikmin 2 and I really feel the reason is because those games are tied in some way.
