I wouldn't necessarily call it a lower skill ceiling. There's a lot of intricacies in puyo outside of just playing fast. It's more like puyo has a hard speed cap while tetris is nearly limitless in speed.

There was a sega rep at the Animevo Puyo Puyo Tetris stream. He explicitly said the reason for the nerf was imbalance in high-level play. Puyo Puyo has been a serious competitive game for like 20 years, they know better than to worry about how scrubs are doing as opposed to competent players.

That just brings you into a random versus match. If you want an endless versus match though, you can choose endurance mode after selecting a gametype. I personally prefer endurance mode over the standard endless tetris mode.

90% of the time you want to go second in puyo. That aside, it's just too easy for tetris to tank puyo attacks and send it right back. And even if they don't do that, they can just do tetrises and t-spins so fast it's nearly impossible for the puyo player to play.
